Deviled Strawberries

Ingredients:

Strawberry Crunch Topping:
– 6 golden Oreo cookies, finely crushed
– 1 tablespoon unsalted butter, melted
– 2 teaspoons strawberry flavored gelatin powder (Jell-O brand used)

Cream Cheese Filling:
– 12-15 large fresh strawberries, rinsed and patted dry very well, cut into halves
– 8 ounces cream cheese, softened to room temperature
– ¾ cup powdered sugar, sifted
– 2 tablespoons heavy cream
– 1 teaspoon vanilla extract
– ⅛ teaspoon salt

Directions:

1. Prepare the strawberry crunch topping by combining the finely crushed golden Oreo cookies, melted butter, and strawberry gelatin powder in a small bowl. Mix well and set aside.
2. In a mixing bowl, beat the softened cream cheese until smooth and creamy.
3. Gradually add the sifted powdered sugar, heavy cream, vanilla extract, and salt to the cream cheese. Continue to beat until the filling is light and fluffy.
4. Carefully cut the strawberries in half and use a small spoon or melon baller to hollow out the center, creating a cavity for the filling.
5. Spoon or pipe the cream cheese filling into each strawberry half, filling the hollowed-out centers generously.
6. Sprinkle the prepared strawberry crunch topping evenly over the filled strawberries.
7. Arrange the deviled strawberries on a serving platter and refrigerate for at least 30 minutes before serving to allow the filling to set.
