Fluffy Cottage Cheese Blueberry Cloud Bread
Sweet, airy, and bursting with berries—your dreamy low-carb treat!
Ingredients:
½ cup full-fat cottage cheese
3 large eggs, separated
¼ tsp cream of tartar
¼ cup fresh blueberries
Optional: pinch of cinnamon or keto sweetener
Instructions:
Step 1: Whip It Up
Preheat oven to 300°F (150°C).
Beat egg whites with cream of tartar until stiff peaks form.
Step 2: Blend the Base
Blend egg yolks and cottage cheese until smooth.
Gently fold in egg whites. Add blueberries and optional sweetener/cinnamon.
Step 3: Shape & Bake
Spoon into mounds on parchment-lined tray (about 6 rounds).
Bake 25–30 mins until puffed and golden.
Step 4: Cool & Enjoy
Cool on a rack.
