Keto Cinnamon Roll Mug Cake
Warm, gooey, and ready in minutes—your single-serve cinnamon fix without the carbs!
Ingredients:
For the Cake:
2 tbsp almond flour
1 tbsp coconut flour
1 tbsp erythritol or keto sweetener
½ tsp cinnamon
¼ tsp baking powder
1 tbsp melted butter
1 egg
1 tbsp unsweetened almond milk
½ tsp vanilla extract
For the Swirl (optional):
½ tbsp melted butter
½ tsp cinnamon
½ tsp sweetener
For the Icing:
1 tbsp cream cheese
1 tsp almond milk
Dash of sweetener
Instructions:
Step 1: Mix the Cake
In a mug, combine all cake ingredients and mix well.
In a small bowl, mix swirl ingredients, then drizzle and swirl into the batter.
Step 2: Microwave
Microwave on high for 60–75 seconds until set but soft in the center. (Don’t overcook!)
Step 3: Make the Icing
Stir together icing ingredients until smooth.
Drizzle over the warm mug cake.
Step 4: Dig In
