Mandarin Orange Cake
Ingredients:
4 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 box (15.25 oz / 432g) yellow cake mix
1 small box (3.4 oz / 96g) instant vanilla pudding mix
1 can (11 oz / 312g) mandarin oranges, drained
1/2 cup crushed pineapple, drained
Optional Glaze or Topping:
1 cup powdered sugar
2–3 tablespoons mandarin orange juice or milk
Directions:
Preheat oven: Set oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
Mix dry ingredients: In a large bowl, combine the yellow cake mix and instant vanilla pudding mix.
Add wet ingredients: Add eggs, vegetable oil, drained mandarin oranges, crushed pineapple, and vanilla extract to the dry mixture. Stir until well combined. You can lightly mash the oranges and pineapple for smoother texture.
Pour into pan: Transfer batter to the prepared baking pan, spreading it evenly.
Bake: Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Cool: Allow the cake to cool completely in the pan.
Optional glaze: In a small bowl, mix powdered sugar with enough mandarin juice or milk to reach desired consistency. Drizzle over the cooled cake.
Serve: Slice and enjoy this simple, fruity, and moist cake.
