Ingredients
For the Cheesecake Filling:
8 oz cream cheese, softened to room temperature
½ cup powdered sugar
1 teaspoon vanilla extract
½ cup Reese’s cups, crushed
For Assembly:
4 chocolate glazed donuts
½ cup creamy peanut butter
For the Peanut Butter Drizzle:
¼ cup creamy peanut butter
2 tablespoons milk
Instructions
Make the Cheesecake Filling: In a medium mixing bowl, beat the softened cream cheese with an electric hand mixer until completely smooth and fluffy. Add the powdered sugar and vanilla extract, then beat again until well combined and no lumps remain. Gently fold in the crushed Reese’s cups with a spatula. Cover and refrigerate the filling for at least 30 minutes to firm up—this makes assembly much easier.
Prepare the Donuts: Using a serrated knife, carefully slice each donut horizontally through the middle, like you’re splitting a burger bun. You should have 4 donut tops and 4 donut bottoms.
Assemble the Sandwiches: Spread a thin, even layer of peanut butter (about 1 tablespoon each) onto the cut side of each donut bottom. This creates a delicious barrier that prevents the donut from getting soggy. Remove the chilled cheesecake filling from the fridge and pipe or spoon it generously over the peanut butter layer. Gently place the donut tops onto the filling.
Make the Drizzle: In a small microwave-safe bowl, combine the ¼ cup peanut butter and 2 tablespoons milk. Microwave for 20-30 seconds, then whisk until smooth and pourable. If it’s too thick, add another teaspoon of milk and whisk again.
Finish and Serve: Place the assembled donut sandwiches on a serving plate. Drizzle the warm peanut butter mixture generously over the tops. Sprinkle with any remaining crushed Reese’s cups for an extra pop of color and flavor. Serve immediately for the best texture—the donut should be soft, the filling cool and creamy.
