Ingredients
For the Brownie Layer
2 cups fudgy brownies, crumbled
For the Cheesecake Filling
12 ounces cream cheese, softened
½ cup powdered sugar, sifted
1 teaspoon vanilla extract
1½ cups heavy whipping cream
For the Toppings
⅓ cup chocolate ganache
⅓ cup caramel sauce
2 tablespoons extra brownie crumbs, for garnish
Instructions
1. Prepare the cheesecake filling
In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth and lump-free, about 2 minutes. Add the powdered sugar and vanilla, and continue beating until incorporated.
In a separate chilled bowl, whip the heavy cream until stiff peaks form. Using a spatula, gently fold the whipped cream into the cream cheese mixture in two additions. Fold until no white streaks remain, being careful not to overmix and deflate the airiness.
2. Prepare the ganache (if making from scratch)
If not using pre-made ganache, combine ⅓ cup semi-sweet chocolate chips with 3 tablespoons of heavy cream in a microwave-safe bowl. Heat in 20-second increments, stirring between each, until smooth and glossy. Set aside to cool slightly.
3. Layer the cups
Select 6 individual serving cups, ramekins, or clear glasses.
Start with a layer of crumbled brownies at the bottom, pressing gently to form a base.
Add a layer of cheesecake filling, smoothing it to the edges.
Drizzle a small amount of chocolate ganache and caramel sauce over the filling.
Repeat the layers—brownie crumbs, cheesecake filling, ganache, and caramel—until the cups are nearly full.
4. Finish and garnish
Top each cup with a final drizzle of ganache and caramel. Sprinkle with reserved brownie crumbs for texture and visual contrast.
5. Chill and serve
Refrigerate the assembled cups for at least 1 hour to allow the layers to set. Serve chilled.
