Luscious Lemon-Lime Cherry Pistachio Cheesecake
Ingredients:
– 1 1/2 cups graham cracker crumbs
– 1/4 cup sugar
– 1/2 cup unsalted butter, melted
– 3 packages (8 ounces each) cream cheese, softened
– 1 cup sugar
– 1 teaspoon vanilla extract
– 3 large eggs
– 1/4 cup fresh lemon juice
– 1/4 cup fresh lime juice
– 1 tablespoon lemon zest
– 1 tablespoon lime zest
– 1/2 cup chopped pistachios
– 1/2 cup chopped cherries
– Whipped cream, for topping
– Whole cherries and chopped pistachios, for garnish
Directions:
1. Preheat oven to 325°F (163°C).
2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined.
3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust. Set aside.
4. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
5. Gradually add 1 cup sugar and vanilla extract, mixing well.
6. Add eggs one at a time, beating on low speed after each addition just until blended.
7. Stir in lemon juice, lime juice, lemon zest, and lime zest until evenly combined.
8. Fold in chopped pistachios and cherries gently.
9. Pour the batter over the prepared crust in the springform pan.
10. Bake for 55-65 minutes or until the center is almost set but still slightly jiggly.
11. Turn off the oven, slightly crack the oven door, and let the cheesecake cool inside for 1 hour.
12. Remove from oven and refrigerate for at least 4 hours or overnight.
13. Before serving, top with whipped cream and garnish with whole cherries and additional chopped pistachios.
