Strawberry Shortcake Cheesecake Rolls

Ingredients:

For the Cake Roll:
– 1 box strawberry cake mix
– 3 large eggs
– 1/3 cup vegetable oil
– 1 cup water

For the Cheesecake Filling:
– 8 oz cream cheese, softened
– 1/4 cup powdered sugar
– 1/2 tsp vanilla extract
– 1 cup whipped topping (like Cool Whip)

For the Strawberry Crunch Topping:
– 1/2 cup Golden Oreos, crushed
– 1 tbsp strawberry gelatin mix (dry)
– 2 tbsp melted butter

Optional Garnish:
– Fresh strawberries, halved
– Extra whipped topping

Directions:

1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and grease it lightly.
2. In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and water. Beat with an electric mixer for 2 minutes until smooth.
3. Pour the batter evenly into the prepared pan and spread to the edges.
4. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
5. While the cake is baking, prepare a clean kitchen towel and sprinkle it with powdered sugar.
6. When the cake is done, immediately loosen the edges with a knife and invert the cake onto the prepared towel. Carefully peel off the parchment paper.
7. Starting from the short end, roll the cake and towel together tightly. Let it cool completely on a wire rack.
8. For the cheesecake filling, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
9. Fold in the whipped topping gently until well combined.
10. Once the cake is cool, carefully unroll it and spread the cheesecake filling evenly over the surface.
11. Roll the cake back up without the towel, placing seam side down on a serving platter.
12. For the strawberry crunch topping, mix crushed Golden Oreos, strawberry gelatin mix, and melted butter until crumbly.
13. Sprinkle the topping evenly over the rolled cake.
14. Garnish with fresh halved strawberries and extra whipped topping if desired.
15. Refrigerate for at least 1 hour before slicing and serving.
