Nutter Butter Ice Cream Sandwiches
Ingredients:
– 24 Nutter Butter cookies
– 1 quart vanilla ice cream, softened
– 1 cup mini peanut butter chips
– 1/2 cup chopped roasted peanuts
– 1/4 cup chocolate chips (optional)
– 1 tablespoon peanut butter (optional, for drizzling)
Directions:
1. Line a baking sheet with parchment paper.
2. Lay out 12 Nutter Butter cookies on the baking sheet, flat side up.
3. Scoop about 2 tablespoons of softened vanilla ice cream onto each cookie.
4. Top each with another Nutter Butter cookie, pressing down gently to create a sandwich.
5. Place the mini peanut butter chips and chopped peanuts in a shallow bowl.
6. Roll the edges of each ice cream sandwich in the peanut butter chips and peanuts, pressing lightly to adhere.
7. If desired, melt chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth.
8. Drizzle melted chocolate and peanut butter over the sandwiches for extra flavor.
9. Freeze the sandwiches on the baking sheet for at least 2 hours or until firm.
10. Serve chilled and enjoy!
