This creamy, rich cheesecake with a glossy strawberry topping is the perfect dessert to impress! 
For the base:
200g crushed biscuits
100g melted butter
For the cheesecake filling:
400g cream cheese
1 cup heavy cream
¾ cup sugar
1 tsp vanilla extract
2 tbsp gelatin (or agar-agar)
¼ cup warm water
For the strawberry topping:
2 cups fresh strawberries 
½ cup sugar
2 tbsp cornstarch
½ cup water
Mix crushed biscuits with melted butter, press into a pan, and chill for 20 minutes.
In a bowl, beat cream cheese, sugar, and vanilla until smooth.
Whip the heavy cream, then fold it into the mixture.
Dissolve gelatin in warm water and mix it into the filling.
Pour over the base and refrigerate for at least 4 hours (or overnight).
Prepare topping: cook strawberries, sugar, water, and cornstarch until thick and glossy. Let it cool.
Pour the strawberry topping over the cheesecake and chill again.
