Chocolate Chip Cheesecake Cookies

Gooey chocolate chip cookies stuffed with creamy cheesecake filling – dessert dreams come true! 😍
Ingredients:
**For the cookie dough:**
* 1 cup (2 sticks) unsalted butter, softened
* 3/4 cup brown sugar
* 1/2 cup granulated sugar
* 2 large eggs
* 2 tsp vanilla extract
* 2 1/2 cups all-purpose flour
* 1 tsp baking soda
* 1/2 tsp salt
* 2 cups semi-sweet chocolate chips
**For the cheesecake filling:**
* 8 oz cream cheese, softened
* 1/4 cup granulated sugar
* 1 tsp vanilla extract
Instructions:
1. **Make the cheesecake filling:** In a bowl, beat the cream cheese, sugar, and vanilla until smooth. Scoop into 12 small dollops (about 1 tbsp each), place on parchment paper, and freeze for 30 minutes until firm.
2. **Prepare the cookie dough:** Cream the butter, brown sugar, and granulated sugar together until fluffy. Add eggs and vanilla and mix well. Stir in flour, baking soda, and salt until just combined. Fold in chocolate chips.
3. **Assemble the cookies:** Scoop about 2 tbsp of cookie dough and flatten it in your hand. Place a frozen cheesecake ball in the center, then cover with another flattened dough piece. Seal the edges completely and roll gently into a ball.
4. **Bake:** Preheat oven to 350°F (175°C). Place cookie balls on a baking sheet lined with parchment paper, spaced apart. Bake for 11–13 minutes or until edges are golden and centers are just set.
5. **Cool & enjoy:** Let cool on the pan for 10 minutes before transferring to a wire rack. Serve warm or chill for a firmer cheesecake center!
