Sticky Honey Blackberry Jalapeño Chicken

**Ingredients:**
* 4 boneless, skinless chicken thighs
* Salt & pepper to taste
* 1 tbsp olive oil
* 1 cup fresh blackberries
* 2 tbsp honey
* 1 tbsp balsamic vinegar
* 1 jalapeño, sliced (seeds removed for less heat)
* 1 clove garlic, minced
* 1 tsp smoked paprika
* 1 tbsp chopped fresh parsley (for garnish)
**Instructions:**
1. Season chicken thighs with salt, pepper, and smoked paprika.
2. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
3. In the same skillet, lower the heat and add blackberries, honey, balsamic vinegar, garlic, and half the sliced jalapeño.
4. Simmer the sauce for 5–7 minutes, gently mashing the blackberries to release their juices and create a thick, sticky glaze.
5. Return the chicken to the skillet and coat it in the sauce. Simmer together for another 3–5 minutes to absorb all the flavors.
6. Garnish with remaining jalapeño slices and chopped parsley before serving.
