Easy Crack Chicken Tenders

Ingredients:

* 1 lb chicken tenders
* 1 cup shredded cheddar cheese

For the Cake:
* 1¾ cups all-purpose flour
* ¾ cup unsweetened cocoa powder
* 2 cups granulated sugar
* 1½ tsp baking powder
* 1½ tsp baking soda
* 1 tsp salt
* 2 large eggs
* 1 cup buttermilk
* ½ cup vegetable oil
* 2 tsp vanilla extract
* 1 cup hot coffee (or hot water)
For the Chocolate Frosting:
* 1 cup unsalted butter (softened)
* 1 cup unsweetened cocoa powder
* 4 cups powdered sugar
* ½ cup heavy cream (more if needed)
* 2 tsp vanilla extract
* Pinch of salt
Optional Decoration:
* Chocolate shavings or sprinkles
* Chocolate chips or curls
Instructions:
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
2. In a large bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt.
3. Add eggs, buttermilk, oil, and vanilla. Mix until smooth.
4. Slowly add hot coffee and mix until well combined. Batter will be thin.
5. Pour batter evenly into prepared pans. Bake for 30–35 minutes or until a toothpick comes out clean.
6. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
7. For the frosting: Beat butter until creamy. Add cocoa powder and mix well.
8. Gradually add powdered sugar, alternating with heavy cream. Beat until fluffy. Add vanilla and a pinch of salt.
9. Frost one cake layer, add the second layer, and frost the top and sides. Decorate with chocolate shavings or chips.
10. Chill for 30 minutes before slicing for the cleanest cuts.
Pro Tip:
For an extra boost of chocolate flavor, spread a layer of chocolate ganache between the cake layers before frosting!
