Filling:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tbsp heavy cream
1 tsp vanilla extract
1/2 cup white chocolate, melted (optional for drizzle)
Instructions:
1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Add eggs and vanilla extract, mixing well.
4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
5. Gradually mix dry ingredients into wet ingredients until a dough forms.
6. Scoop small portions, roll into balls, and flatten slightly on the tray.
7. Bake for 10–12 minutes, then let cookies cool completely.
8. For the filling, beat butter until smooth, then add powdered sugar, cream, and vanilla. Mix until fluffy.
9. Spread or pipe the filling onto one cookie, then sandwich with another.
