* Powdered sugar for rolling
For the Cheesecake Filling:
* 8 oz cream cheese, softened
* 1/2 cup powdered sugar
* 1 tsp vanilla extract
* 1 cup whipped topping
For the Strawberry Filling:
* 1 1/2 cups fresh strawberries, diced
* 2 tbsp strawberry jam
Topping:
* Melted white chocolate
* Crushed shortbread cookies or graham crackers
* Fresh strawberries for garnish
Instructions:
1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
2. In a large bowl, beat eggs and sugar until light and fluffy. Add vanilla extract.
3. In another bowl, whisk flour, baking powder, and salt. Fold dry ingredients into wet mixture gently.
4. Spread batter evenly into prepared pan and bake for 10–12 minutes until lightly golden.
5. Dust a clean kitchen towel with powdered sugar. Carefully flip warm cake onto towel and roll it up gently. Let cool completely.
6. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped topping.
7. Unroll cooled cake carefully. Spread cheesecake filling evenly across the surface.
8. Mix strawberries with strawberry jam and scatter over the filling.
9. Roll cake back up tightly. Chill for at least 1 hour.
10. Drizzle with melted white chocolate, sprinkle crushed cookies on top, and garnish with fresh strawberries before serving.
