Pineapple Coconut Dream Cake

Ingredients:
For the cake:
* 2 1/2 cups all-purpose flour
* 2 tsp baking powder
* 1/2 tsp salt
* 1 cup butter, softened
* 1 3/4 cups sugar
* 4 large eggs
* 1 tsp vanilla extract
* 1 cup coconut milk
* 1/2 cup crushed pineapple, drained
For the creamy filling:
* 1 package instant vanilla pudding mix
* 1 1/2 cups cold milk
* 1 cup whipped topping
* 1/2 cup crushed pineapple
* 1/2 cup shredded coconut
For the frosting:
* 8 oz cream cheese, softened
* 1/2 cup butter, softened
* 3 cups powdered sugar
* 1 tsp vanilla extract
Toppings:
* Pineapple chunks
* Toasted coconut flakes
* White chocolate curls
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In another bowl, beat butter and sugar until fluffy.
4. Add eggs one at a time, then mix in vanilla.
5. Alternate adding dry ingredients and coconut milk until smooth.
6. Fold in crushed pineapple.
7. Divide batter evenly into prepared pans.
8. Bake for 30–35 minutes or until a toothpick inserted comes out clean.
9. Let cakes cool completely.
10. Prepare vanilla pudding with cold milk and fold in whipped topping, pineapple, and shredded coconut.
11. Beat cream cheese, butter, powdered sugar, and vanilla until smooth for the frosting.
12. Layer cake with creamy pineapple filling between layers.
13. Frost the entire cake and decorate with pineapple chunks, toasted coconut, and white chocolate curls.
14. Chill for 1 hour before serving for the best texture.
