Ingredients:
For the Cake
1 1/2 cups unsalted butter, softened
2 1/2 cups granulated sugar
5 large eggs
3 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup sour cream, room temperature
2 teaspoons vanilla extract
2 cups diced peaches, fresh or canned and drained
For the Peach Topping
1 1/2 cups sliced peaches
2 tablespoons brown sugar
1 teaspoon cinnamon
For the Glaze
1 cup powdered sugar
2 to 3 tablespoons milk or peach juice
1/2 teaspoon vanilla extract
Instructions:
Preheat the oven to 325°F. Grease and flour a 10 inch bundt pan very well, or use baking spray with flour so the cake releases cleanly.
In a small bowl, toss the sliced peaches with brown sugar and cinnamon. Arrange them neatly in the bottom of the prepared bundt pan.
In a large mixing bowl, beat the softened butter and sugar together for about 5 minutes, until the mixture becomes light, creamy, and fluffy.
Add the eggs one at a time, mixing well after each one. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
Add the dry ingredients to the butter mixture in three parts, alternating with the sour cream. Begin and end with the flour mixture. Mix gently just until combined.
Fold in the diced peaches with a spatula. Try not to overmix, so the cake stays soft and tender.
Carefully spoon the batter over the peach topping in the bundt pan and smooth the top.
Bake for 70 to 80 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for about 15 minutes, then carefully invert it onto a wire rack or serving plate. Allow it to cool completely.
For the glaze, whisk powdered sugar, milk or peach juice, and vanilla extract until smooth. Drizzle over the cooled cake.
Helpful Tips
If using canned peaches, drain them very well so the cake does not become too wet.
Fresh ripe peaches give the best flavor when they are in season.
Make sure the cake cools slightly before turning it out, but do not leave it in the pan too long or the peach topping may stick.
