For the Hand Pies
2 refrigerated pie crusts (or homemade pie dough)
2 cups fresh peaches, peeled and diced
⅓ cup granulated sugar
2 tbsp brown sugar
1 tbsp cornstarch
1 tsp lemon juice
1 tsp vanilla extract
1 tsp ground cinnamon
¼ tsp ground nutmeg
Pinch of salt
1 tbsp unsalted butter
Egg Wash
1 large egg
1 tbsp milk
Vanilla Glaze
1 cup powdered sugar
2 tbsp milk
½ tsp vanilla extract
Optional Toppings
Coarse sanding sugar
Cinnamon sugar
Powdered sugar
Fresh peach slices for serving
Step 1:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2:
In a saucepan over medium heat, combine the peaches, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, salt, and butter. Cook for 5–7 minutes, stirring often, until the filling thickens. Let it cool completely.
Step 3:
Roll out the pie crusts and cut 4 to 5-inch circles using a cookie cutter or small bowl. Gather and reroll the scraps to make additional circles.
Step 4:
Place about 2 tablespoons of the cooled peach filling in the center of half of the circles.
Step 5:
Brush the edges lightly with water, fold the dough over to create a half-moon shape, and press the edges together with a fork to seal.
Step 6:
Arrange the hand pies on the prepared baking sheet. Cut two small slits in the top of each pie to allow steam to escape.
Step 7:
Whisk together the egg and milk, then brush the tops of the pies with the egg wash. Sprinkle with coarse sugar if desired.
Step 8:
Bake for 18–22 minutes, or until the pies are puffed and golden brown.
Step 9:
Cool on the baking sheet for 10 minutes before transferring to a wire rack.
Step 10:
Whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle the glaze over the cooled hand pies and let it set before serving.
