Banana Pudding Easter Truffles 🍌
Ingredients
For the Filling
2 cups vanilla wafer crumbs (about 45–50 wafers)
½ cup cream cheese, softened
1 box (3.4 oz) banana pudding mix
2 tablespoons milk
1 teaspoon vanilla extract
For the Coating
2 cups white chocolate chips or white candy melts
Pastel food coloring (pink, yellow, or lavender), optional
For Decoration (Optional)
Additional crushed vanilla wafers
Easter-themed sprinkles
Colored candy melts for drizzling
Instructions
1. Prepare the Filling
In a medium mixing bowl, combine the vanilla wafer crumbs, softened cream cheese, dry banana pudding mix, milk, and vanilla extract. Stir thoroughly with a spatula or mix with a hand mixer until the mixture comes together into a smooth, cohesive dough that holds its shape when pressed.

2. Shape and Chill the Truffle Centers
Using a small cookie scoop or your hands, portion the filling into 1-inch balls. Roll each gently between your palms to create smooth, round shapes. Arrange the truffles on a baking sheet lined with parchment paper, spacing them slightly apart. Refrigerate for 30 to 45 minutes, or until firm enough to hold their shape when handled.

3. Prepare the Coating
Place the white chocolate chips or candy melts in a microwave-safe bowl. Heat in 30-second intervals at 50% power, stirring thoroughly after each interval, until the chocolate is completely smooth and fluid. If using pastel food coloring, add a few drops at this stage and stir until the color is evenly distributed.

4. Dip the Truffles
Remove the chilled truffles from the refrigerator. Working with one at a time, drop a truffle into the melted coating. Using a dipping fork or two forks, turn the truffle to coat completely. Lift it out, allowing excess coating to drip back into the bowl. Gently slide the coated truffle onto the parchment-lined baking sheet.

5. Decorate While Wet
Immediately after dipping, sprinkle the top of each truffle with crushed vanilla wafers, Easter sprinkles, or a drizzle of contrasting colored candy melts. Work quickly before the coating begins to set.

6. Set and Serve
Allow the decorated truffles to rest at room temperature for 15 to 20 minutes, or refrigerate for 10 minutes, until the coating is fully hardened. Serve in a decorative bowl or arrange in gift boxes for holiday giving.
