Caramel Brownie Cheesecake 

A rich and indulgent dessert with fudgy brownies, creamy cheesecake, and silky caramel drizzle!
Ingredients:
For the Brownie Layer:
1/2 cup unsalted butter (melted)
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
For the Cheesecake Layer:
16 oz cream cheese (softened)
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
For the Topping:
1/2 cup caramel sauce
1/3 cup chocolate ganache or melted chocolate
2 tbsp crushed toffee or cookie crumbs (optional)
Instructions:
1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
2. Make the brownie layer. In a bowl mix melted butter and sugar. Add eggs and vanilla, whisk until smooth.
3. Stir in cocoa powder, flour, salt, and baking powder until a thick batter forms.
4. Spread the brownie batter evenly into the prepared pan.
5. In another bowl beat cream cheese and sugar until smooth and creamy.
6. Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream until silky.
7. Pour the cheesecake mixture over the brownie batter and smooth the top.
8. Bake for 50–55 minutes until the center is set but slightly jiggly.
9. Cool completely, then refrigerate for at least 2 hours.
10. Before serving, drizzle caramel sauce and melted chocolate over the top. Sprinkle with crushed toffee if desired.
11. Slice into squares and enjoy your decadent caramel brownie cheesecake!
Pro Tip:
For extra gooey brownies, slightly underbake the brownie layer by 3–4 minutes before adding the cheesecake mixture. This keeps the bottom ultra fudgy and delicious!
