Chocolate Fudge Layer Cake
Rich chocolate layers with creamy filling and a glossy, gooey fudge drip.
Ingredients
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 cups granulated sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup hot coffee
1 cup unsalted butter, softened
8 oz cream cheese, softened
4 cups powdered sugar
2 tsp vanilla extract
2 tbsp heavy cream
1 1/2 cups semisweet chocolate chips
3/4 cup heavy cream
1/2 cup whipped topping or whipped cream, for garnish
4 chocolate sandwich cookies or chocolate pieces, for garnish
Directions
Preheat the oven to 350°F and grease and line three 6-inch round cake pans.
Whisk the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt in a large bowl.
Add the eggs, milk, oil, and 2 tsp vanilla, then beat until smooth.
Stir in the hot coffee until the batter is fully combined and thin.
Divide the batter evenly between the pans and bake for 24 to 28 minutes until a toothpick comes out with a few moist crumbs. Cool completely.
Beat the butter and cream cheese until smooth, then mix in the powdered sugar, remaining 2 tsp vanilla, and 2 tbsp heavy cream until fluffy.
Place one cake layer on a serving plate and spread with a thick layer of frosting.
Repeat with the second cake layer and more frosting, then top with the final cake layer.
Frost the top and sides lightly, then chill the cake for 20 minutes.
Heat 3/4 cup heavy cream until steaming, pour it over the chocolate chips, and let it sit for 1 minute.
Stir until smooth and glossy, then spoon the ganache over the top so it drips down the sides.
Pipe whipped topping on top and finish with chocolate sandwich cookie pieces before serving.
