Easy Soft Zeppole (Italian Donuts)

1 cup water
¼ cup unsalted butter
1 tablespoon sugar
Pinch of salt
1 cup all-purpose flour
3 large eggs
1 teaspoon vanilla extract
Vegetable oil for frying
Powdered sugar for dusting
Directions:
In a saucepan over medium heat, bring water, butter, sugar, and salt to a boil.
Add flour all at once and stir vigorously until the dough pulls away from the sides of the pan (about 2 minutes).
Remove from heat and let cool for 5–10 minutes.
Beat in eggs one at a time, mixing well after each. Stir in vanilla. Dough should be thick and glossy.
Heat oil in a deep pan to 350°F (175°C).
Drop dough by rounded tablespoons (or use a small cookie scoop) into hot oil. Fry in batches, turning gently, until golden brown and puffed — about 3–4 minutes.
Drain on paper towels. Roll or dust in powdered sugar while still warm.
