Keto Crispy Reuben Roll-Ups

Crunchy, cheesy, and oh-so-satisfying—your favorite deli sandwich, keto-style!
Ingredients:
8 slices deli corned beef
8 slices Swiss cheese
½ cup sauerkraut, well-drained
2 tbsp sugar-free Thousand Island dressing
1 tbsp butter (for skillet)
Optional: dill pickles or chopped parsley for serving
Instructions:
Step 1: Roll It Up
Lay out a slice of corned beef.
Top with Swiss cheese, a spoonful of sauerkraut, and a drizzle of dressing.
Roll tightly. Repeat with all slices.
Step 2: Crisp in Skillet
Melt butter in a skillet over medium heat.
Cook roll-ups seam-side down, 2–3 minutes per side until golden and melty.
Step 3: Serve Hot
Serve warm with optional pickles or parsley.
