Mushroom Swiss Cheese Meatloaf – Juicy, Savory & Comforting!
1½ lbs ground beef
1 cup mushrooms, finely chopped
1 small onion, finely diced
2 cloves garlic, minced
1 cup breadcrumbs
2 large eggs
½ cup milk
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
Salt & black pepper, to taste
1 cup shredded Swiss cheese
Optional topping
½ cup extra Swiss cheese
Chopped parsley for garnish
Preheat oven to 375°F (190°C).
Lightly grease a loaf pan or line a baking sheet with parchment paper.
In a skillet over medium heat, cook chopped mushrooms and onion for 3–4 minutes until softened.
Add garlic and cook 30 seconds more.
Allow the mixture to cool slightly.
In a large bowl combine:
Ground beef
Sautéed mushroom mixture
Breadcrumbs
Eggs
Milk
Worcestershire sauce
Italian seasoning
Salt and pepper
Swiss cheese
Mix gently until just combined.
Transfer the mixture into a loaf pan or shape into a loaf on the baking sheet.
Bake 40–45 minutes until cooked through.
During the last 5 minutes, sprinkle extra Swiss cheese on top and return to the oven until melted.
Let rest 5–10 minutes before slicing.
Garnish with chopped parsley if desired.
