Ingredients:
2 cups chocolate cookie crumbs
1/2 cup melted butter
3 (8 oz) blocks cream cheese, softened
1 cup granulated sugar
1/2 cup brown sugar
3 large eggs
1 cup sour cream
1/2 cup heavy cream
8 oz melted dark chocolate
4 oz melted milk chocolate
1 tsp vanilla extract
Topping:
1/2 cup chocolate ganache
Whipped cream
Chocolate curls or chunks
Instructions:
1. Preheat oven to 325°F (160°C). Mix cookie crumbs with melted butter and press firmly into the bottom of a springform pan.
2. Bake crust for 10 minutes, then let cool.
3. In a large bowl, beat cream cheese until smooth. Add sugars and mix until creamy.
4. Add eggs one at a time, mixing gently after each.
5. Mix in sour cream, heavy cream, vanilla, and melted dark and milk chocolate until fully combined.
6. Pour batter over the crust and smooth the top.
7. Bake in a water bath for about 55–60 minutes, until the center is slightly set.
8. Turn off oven and let cheesecake cool inside with the door slightly open.
9. Chill in the refrigerator for at least 4 hours or overnight.
10. Top with ganache, whipped cream, and chocolate pieces before serving.
