The weather is just beautiful in New England today. After a week of clouds and rain, the sun is finally peeking through. I love springtime, seeing all the flower buds and blooms. Finally. We waited a long time around here for spring, and it\u2019s always glorious when it finally does!<\/p>\n

Spring is also a beautiful time for babies to arrive. Not that I\u2019m hinting or anything. No babies expected around here. (Though we do have a nest with baby birds in our yard!)Springtime is when three of my four baby boys arrived. It\u2019s such a beautiful time of year to take a new baby out walking in the stroller\u2026 I loved doing that with each my babies.<\/span><\/p>\n

So spring babies mean lots of spring birthdays in our house. My kids are funny about celebrating their birthdays. Nearly all of them prefer to celebrate with something besides birthday cake! They\u2019ll say things like\u2026.<\/p>\n

\u201cDoes it\u00a0have<\/em>\u00a0to be\u00a0cake?\u201d<\/p>\n

(Do you hear this at your house?\u00a0As if cake is a form of torture\u2026\u00a0 And it would be that I LOVE baking cakes lol.)<\/p>\n

\u201cNo it does\u00a0not<\/em>\u00a0have to be cake,\u201d I reply with a sigh\u2026<\/p>\n

So they opt for a trifle or an ice cream pie or cake. One of my boys recently requested a trifle with coffee whipped cream, heath candy bits, hot fudge and brownies. (Eek!!! It was amazing.)<\/p>\n

I think it\u2019s the peanut butter whipped cream that makes this\u00a0Peanut Butter Trifle<\/strong><\/em>\u00a0so fabulous. I love peanut butter cheesecake and peanut butter mousse, so thought I\u2019d give it a whirl.\u00a0I didn\u2019t actually sweeten the\u00a0peanut butter whipped cream\u00a0because everything else is so sweet. And I think the balance is just right, but tell me what you think.<\/p>\n

So bake up a batch of your favorite brownies. As the brownies bake, whip the whipping cream and peanut butter together. Chop the peanut butter cups. Whip up the chocolate pudding. Make sure to cool the brownies completely. Then layer all the ingredients in a glass bowl or trifle dish.<\/p>\n
