Stir with a fork until the mixture resembles wet sand. Press the crumbs firmly into the bottom and slightly up the sides of a 9-inch pie plate. Bake for 10 minutes. Remove from the oven and let the crust cool completely on a wire rack.<\/p>\n<p>Make the cookie dough filling \u2013 In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together with an electric mixer on medium speed until light and fluffy, about 2 minutes.<\/p>\n<p>Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.<\/p>\n<p>In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.<\/p>\n<p>Fold in the 1 cup of semi-sweet chocolate chips with a spatula until evenly distributed.<\/p>\n<p>Assemble the pie \u2013 Pour the cookie dough filling into the cooled graham cracker crust. Spread it evenly with the spatula.<\/p>\n<p>Bake for 25\u201330 minutes. The pie is ready when the edges are golden brown and the center is slightly soft but not wet. A toothpick inserted near the edge should come out clean; the center will be gooey.<\/p>\n<p>Remove the pie from the oven. Let them sit undisturbed for 5 minutes.<\/p>\n<p>After 5 minutes, stir gently with a whisk or spatula until the mixture is smooth, glossy, and fully combined.<\/p>\n<p>Let the ganache cool for 5\u201310 minutes, until it thickens slightly but is still pourable. Pour the ganache over the cooled pie, spreading it to the edges with a spatula.<\/p>\n<p>Refrigerate the pie uncovered for at least 2 hours, or until the ganache is fully set.
