In a skillet over medium heat, cook ground beef and onion until browned. Add garlic and spices, cook for 2 more minutes. Drain excess fat.<br \/>\n2. Stir in both cheeses until melted and combined with beef. Remove from heat.<br \/>\n3. Lay out tortillas, spoon filling into the center of each, and fold tightly like a burrito.<br \/>\n4. To fry: Heat oil in a pan over medium heat. Fry each chimichanga seam-side down until golden and crispy, about 2\u20133 minutes per side.<br \/>\n*To bake*: Brush with oil and bake at 425\u00b0F (220\u00b0C) for 15\u201320 minutes, flipping halfway.<br \/>\n5. Top with sour cream, salsa, tomatoes, and cilantro.
