Boil the beets in a large pot of water for 30 minutes or until fork-tender.<br \/>\n2. Drain and cool the beets. Peel and slice into rounds or wedges.<br \/>\n3. In a saucepan, combine vinegar, water, sugar, and salt. Add cloves, peppercorns, and cinnamon stick if using.<br \/>\n4. Bring the brine to a boil, then reduce to a simmer for 5 minutes.<br \/>\n5. Pack sliced beets into sterilized jars.<br \/>\n6. Pour hot brine over beets, leaving 1\/2-inch headspace.<br \/>\n7. Seal jars and let cool.
