Ingredients:
1 lb ground beef
1/2 onion, finely chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
4 large flour tortillas
Oil for frying
Optional toppings: diced tomatoes, sour cream, chopped cilantro, salsa
Instructions:
1. In a skillet over medium heat, cook ground beef, onion, and garlic until browned. Drain excess grease.
2. Stir in cumin, chili powder, paprika, salt, and pepper. Cook for another 2–3 minutes.
3. Remove from heat and mix in shredded cheeses until slightly melted.
4. Spoon the beef mixture into the center of each tortilla.
5. Fold in the sides and roll tightly into a burrito shape.
6. Heat oil in a pan over medium heat and fry chimichangas seam-side down until golden and crispy on all sides.
7. Remove and drain on paper towels.
8. Serve hot with your favorite toppings like sour cream, salsa, and fresh cilantro.
