Ingredients:
Cake:
3/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
3 large eggs
3/4 cup sugar
1 tsp vanilla extract
2 tbsp milk
1/4 cup strawberry puree or gelatin mix
Filling:
8 oz cream cheese (softened)
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup whipped cream
Topping:
1/2 cup crushed shortbread cookies or cake crumbs
Fresh strawberries (sliced)
Optional: white chocolate drizzle
Instructions:
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk flour, baking powder, and salt.
3. In another bowl, beat eggs and sugar until light and fluffy. Mix in vanilla, milk, and strawberry puree.
4. Gently fold dry ingredients into the batter.
5. Spread batter evenly onto the baking sheet and bake for 12–15 minutes.
6. While warm, roll the cake in parchment paper and let cool completely.
7. Beat cream cheese, powdered sugar, and vanilla until smooth, then fold in whipped cream.
8. Unroll cake, spread filling evenly, and roll back tightly.
9. Chill for 1 hour, then slice into rolls.
10. Top with crumbs and fresh strawberries before serving.
