Cheddar Crab Cakes

Golden, cheesy, crab-packed cakes with a crispy crust and melty middle! 🦀🧄🧈
Ingredients:
* 1 lb lump crab meat (picked clean of shells)
* 1 cup sharp cheddar cheese, shredded
* 1/3 cup mayonnaise
* 1 large egg
* 1 tablespoon Dijon mustard
* 1 teaspoon Worcestershire sauce
* 1/2 teaspoon Old Bay seasoning
* 1/4 teaspoon garlic powder
* 1/4 cup chopped chives or green onions
* 1/2 cup breadcrumbs (panko preferred)
* Salt and pepper to taste
* 2 tablespoons unsalted butter (for frying)
* 1 tablespoon oil (for frying)
Instructions:
1. In a large bowl, whisk together the mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay, garlic powder, salt, and pepper.
2. Gently fold in the crab meat, cheddar cheese, chopped chives, and breadcrumbs. Mix just until combined—don’t overmix!
3. Form into 8 equal patties and place them on a plate. Chill in the fridge for 15 minutes to help them hold their shape.
4. Heat butter and oil in a skillet over medium heat. Once hot, add crab cakes and cook for about 4–5 minutes per side until golden and crispy.
5. Remove and drain on paper towels. Serve warm with your favorite sauce or aioli.
Pro Tip:
For extra flavor, serve with a lemon-garlic aioli or drizzle with a creamy cheddar sauce like in the photo!
