Banana Pudding Cake Roll 

A light and fluffy vanilla sponge cake rolled with creamy banana pudding filling and fresh bananas for the ultimate dreamy dessert!

Ingredients:
For the Cake:
* 4 large eggs
* 3/4 cup granulated sugar
* 1 teaspoon vanilla extract
* 3/4 cup all-purpose flour
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* Powdered sugar for rolling
For the Filling:
* 1 package (3.4 oz) instant banana pudding mix
* 1 cup cold milk
* 1 cup heavy whipping cream
* 2 tablespoons powdered sugar
* 2 bananas, peeled
For the Frosting & Topping:
* 1 1/2 cups whipped topping or whipped cream
* Crushed vanilla wafers
* Banana slices for garnish
Instructions:
1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
2. In a large bowl, beat eggs for 3–4 minutes until pale and fluffy. Gradually add sugar and vanilla extract.
3. In another bowl, whisk together flour, baking powder, and salt. Fold dry ingredients gently into the egg mixture.
4. Spread batter evenly into prepared pan and bake for 10–12 minutes until the cake springs back when touched.
5. Dust a clean kitchen towel with powdered sugar. Turn warm cake onto towel, peel off parchment paper, and carefully roll cake up with towel. Let cool completely.
6. In a mixing bowl, whisk banana pudding mix with cold milk until thickened. In another bowl, whip heavy cream with powdered sugar until stiff peaks form. Fold whipped cream into pudding mixture.
7. Carefully unroll cooled cake. Spread banana pudding filling evenly across the cake.
8. Place whole bananas along one edge of the cake and gently roll cake back up tightly.
9. Frost outside with whipped topping or whipped cream. Garnish with banana slices and crushed vanilla wafers.
10. Chill for at least 1 hour before slicing and serving.

For extra banana flavor, brush the cake lightly with banana milk before adding the filling. It keeps the cake super moist and delicious!
