Ultimate Chocolate Cake Recipe

Ingredients

For the Cake

2 cups (250g) all-purpose flour

2 cups (400g) granulated sugar

¾ cup (75g) unsweetened cocoa powder

2 tsp baking powder

1½ tsp baking soda

1 tsp salt

2 large eggs

1 cup (240ml) milk

½ cup (120ml) vegetable oil

2 tsp vanilla extract

1 cup (240ml) hot coffee or hot water

For the Chocolate Frosting

250g unsalted butter, softened

3½ cups (440g) icing sugar

¾ cup (75g) cocoa powder

¼ cup (60ml) milk

2 tsp vanilla extract

200g melted dark chocolate, cooled slightly

Method

Make the Cake

1. Preheat oven to 175°C (350°F).

2. Grease and line two 8-inch cake pans.

3. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

4. Add eggs, milk, oil, and vanilla. Mix until smooth.

5. Gradually stir in the hot coffee or hot water. The batter will be thin.

6. Divide evenly between the cake pans.

7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

8. Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the Frosting

1. Beat butter until light and fluffy.

2. Add icing sugar and cocoa powder gradually.

3. Mix in milk and vanilla.

4. Pour in the melted chocolate and beat until smooth and creamy.

Assemble

1. Place one cake layer on a cake board or plate.

2. Spread a generous layer of frosting.

3. Add the second cake layer.

4. Cover the entire cake with frosting.

5. For the glossy finish shown in the image, pour a chocolate ganache over the frosted cake and smooth gently.

Chocolate Ganache (Optional)

200g dark chocolate

200ml whipping cream

Heat the cream until steaming, pour over the chocolate, let sit for 2 minutes, then stir until smooth. Allow to cool slightly before pouring over the cake.

Yield: 12–14 servings
