Ingredients:

* 1 3/4 cups granulated sugar
* 4 large eggs
* 1 teaspoon vanilla extract
* 1/2 cup milk
* Zest of 2 limes
* 2 tablespoons fresh lime juice
For the Strawberry Filling:
* 2 cups fresh strawberries, diced
* 1/4 cup sugar
* 1 tablespoon lime juice
For the Frosting:
* 8 oz cream cheese, softened
* 1 cup heavy whipping cream
* 1/2 cup powdered sugar
* 1 teaspoon vanilla extract
* Zest of 1 lime
For Garnish:
* Fresh strawberry pieces
* Lime zest
* Whipped cream swirls
Instructions:
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In a large mixing bowl, beat butter and sugar until light and fluffy.
4. Add eggs one at a time, then mix in vanilla, lime zest, and lime juice.
5. Alternate adding the dry ingredients and milk, mixing until just combined.
6. Divide batter evenly between prepared pans.
7. Bake for 28–30 minutes or until a toothpick inserted in the center comes out clean.
8. Cool cakes completely.
9. For the filling, combine strawberries, sugar, and lime juice. Let sit for 15 minutes.
10. For the frosting, beat cream cheese until smooth. Add powdered sugar and vanilla.
11. In a separate bowl, whip the heavy cream to stiff peaks, then fold into the cream cheese mixture. Stir in lime zest.
12. Place one cake layer on a serving plate. Spread a layer of frosting and spoon over half of the strawberry filling.
13. Add the second cake layer and frost the top and sides.
14. Decorate with whipped cream swirls, remaining strawberries, and lime zest.
15. Chill for at least 1 hour before slicing and serving.
