Berry Velvet Celebration Cake 

A stunning red velvet layer cake filled with silky cream cheese frosting and crowned with fresh berries and cherries for the ultimate celebration dessert!

Ingredients:
For the Cake:
• 2 1/2 cups all-purpose flour
• 1 1/2 cups granulated sugar
• 1 tsp baking soda
• 1 tsp salt
• 1 tbsp cocoa powder
• 1 cup buttermilk
• 1 cup vegetable oil
• 2 large eggs
• 2 tbsp red food coloring
• 1 tsp vanilla extract
• 1 tsp white vinegar
For the Cream Cheese Frosting:
• 16 oz cream cheese, softened
• 1/2 cup unsalted butter, softened
• 4 cups powdered sugar
• 1 tsp vanilla extract
For the Topping:
• Fresh strawberries, halved
• Fresh cherries
• Mixed berries (optional)
• Berry sauce or strawberry glaze for drizzling
Instructions:
1. Preheat oven to 350°F (175°C). Grease and line three 6-inch cake pans.
2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
3. In another bowl, combine buttermilk, oil, eggs, food coloring, vanilla, and vinegar.
4. Gradually mix the wet ingredients into the dry ingredients until smooth.
5. Divide the batter evenly among the prepared pans.
6. Bake for 28–35 minutes or until a toothpick inserted into the center comes out clean.
7. Allow cakes to cool completely before frosting.
8. Beat cream cheese and butter until smooth and fluffy.
9. Gradually add powdered sugar and vanilla, beating until creamy.
10. Place one cake layer on a serving plate and spread an even layer of frosting.
11. Repeat with the remaining layers.
12. Frost the top of the cake and decorate with strawberries, cherries, and mixed berries.
13. Drizzle lightly with berry sauce for a beautiful finishing touch.

Chill the cake for 30 minutes before serving to help the frosting set and make cleaner slices.
