Ingredients:
1 cup chocolate cookie crumbs or crushed brownies
4 tbsp melted butter
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup caramel sauce
1/2 cup semi-sweet chocolate chips, melted
1/2 cup brownie batter (homemade or boxed)
2 tbsp chocolate chips (for topping)
Instructions:
Preheat oven to 325°F (160°C). Grease and line a springform pan.
Mix cookie crumbs with melted butter and press into the bottom of the pan to form the crust. Bake for 10 minutes, then let cool.
Spread a thin layer of brownie batter over the crust.
In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla.
Pour cheesecake mixture over the brownie layer. Drizzle caramel sauce and melted chocolate on top. Use a knife to gently swirl for a marbled effect.
Sprinkle chocolate chips over the top.
Bake for 45–55 minutes until center is just set. Turn off oven and let cheesecake cool inside with the door slightly open.
Chill in the fridge for at least 4 hours before slicing.
