**Ingredients:**
*For the Cookies:*
* 1 cup unsalted butter, softened
* 1 cup brown sugar
* 1/2 cup granulated sugar
* 2 large eggs
* 2 tsp vanilla extract
* 2 1/2 cups all-purpose flour
* 1 tsp baking soda
* 1/2 tsp salt
* 1 cup crushed graham crackers (optional, for texture)
*For the Cheesecake Filling:*
* 8 oz cream cheese, softened
* 1/2 cup powdered sugar
* 1 tsp vanilla extract
*For the Topping:*
* 1/2 cup caramel sauce (store-bought or homemade)
* White chocolate drizzle (optional)
**Instructions:**
1. **Make the cookie dough:** In a large bowl, cream the butter and both sugars until fluffy. Beat in the eggs and vanilla. Gradually mix in the flour, baking soda, salt, and crushed graham crackers if using. Chill dough for 30 minutes.
2. **Bake the cookies:** Preheat oven to 350°F (175°C). Scoop dough into small balls and flatten slightly on a baking sheet. Bake for 10–12 minutes, until golden brown. Cool completely.
3. **Prepare the cheesecake filling:** Beat cream cheese, powdered sugar, and vanilla until smooth. Chill for 30 minutes for a firmer consistency.
4. **Assemble:** Spread or pipe cheesecake filling onto the flat side of a cookie, then sandwich with another cookie.
5. **Drizzle:** Warm the caramel slightly and drizzle over the cookie sandwiches. Add white chocolate drizzle if desired.
6. **Chill again (optional):** For a firmer bite, chill the sandwiches for 20 minutes before serving.
**Pro Tip:**
Crush extra cookies and sprinkle over the top before drizzling caramel for a bakery-style finish!
