Chicken and Bacon Fried Rice

A smoky, savory twist on classic fried rice with juicy chicken and crispy bacon! 😋
Ingredients:
* 2 cups cooked rice (preferably cold, day-old)
* 1 cup cooked chicken, diced
* 4 strips of bacon, chopped
* 1/2 cup frozen peas
* 1/2 cup corn kernels
* 1/2 onion, diced
* 2 green onions, chopped (optional)
* 2 tablespoons soy sauce
* 1 tablespoon sesame oil (or any cooking oil)
* 2 eggs, lightly beaten
* Salt and pepper to taste
Instructions:
1. In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pan.
2. Add diced onion to the pan and sauté until soft.
3. Push onions to one side and scramble the eggs on the other side of the pan. Mix together once cooked.
4. Add the chicken, peas, and corn. Stir-fry for 2–3 minutes until heated through.
5. Add the rice, breaking up any clumps. Stir in soy sauce and sesame oil. Mix everything together well.
6. Return the bacon to the pan and stir until evenly distributed.
7. Taste and season with salt and pepper as needed. Garnish with chopped green onions if desired.
Pro Tip:
Use cold, leftover rice for the best texture—it fries up beautifully without getting mushy!
