📋 Ingredients
For the Cupcakes
● 3 large eggs
● 1 tablespoon unsalted butter, melted
● 3 tablespoons powdered sweetener
● ¾ cup blanched almond flour
● 1½ teaspoons baking powder
For the Cream Cheese Frosting
● 2 cups cream cheese, softened
● 4 tablespoons powdered sugar substitute
● Natural red food coloring or strawberry powder
Optional Decoration
● Shredded coconut for a snowy finish
📝 Instructions
1: Prepare the oven
Preheat your oven to 390°F (200°C).
Line a muffin tin with cupcake liners and set aside.
2: Make the cupcake batter
In a large mixing bowl, beat the eggs until light and fluffy.
Add the melted butter, powdered sweetener, almond flour, and baking powder.
Mix until the batter is smooth and free of lumps.
3: Bake the cupcakes
Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
Bake for approximately 10 minutes, or until the tops are lightly golden and spring back when touched.
Remove from the oven and allow the cupcakes to cool completely before decorating.
4: Prepare the frosting
Place the softened cream cheese and powdered sweetener into a large bowl.
Using a hand mixer, beat until smooth, creamy, and fluffy.
5: Color the frosting
Transfer about three-quarters of the frosting into a separate bowl.
Add natural red food coloring or strawberry powder and mix until you achieve your desired shade of pink or red.
Leave the remaining frosting white.
6: Fill the piping bags
Place the white frosting into a piping bag fitted with a small round tip.
Transfer the colored frosting into another piping bag fitted with a large star tip or your favorite decorating tip.
Refrigerate both piping bags for about 1 hour to allow the frosting to firm up.
7: Decorate the cupcakes
Using the colored frosting, pipe a tall swirl onto each cupcake, starting in the center and working outward before building upward into a soft peak.
Add small dots of white frosting around the swirl for a festive look.
Finish with a small white dot on top.
8: Add the finishing touch
If desired, sprinkle lightly with shredded coconut to create a snowy, decorative effect.
