Classic New York Cheesecake

Ingredients:
For the Crust:
* 2 cups graham cracker crumbs
* 1/2 cup melted butter
* 1/4 cup sugar
For the Cheesecake Filling:
* 4 (8 oz) packages cream cheese, softened
* 1 1/4 cups sugar
* 1/2 cup sour cream
* 2 teaspoons vanilla extract
* 4 large eggs
* 2 tablespoons all-purpose flour
* 1/4 cup heavy cream
Optional Toppings:
* Fresh strawberries
* Whipped cream
* Mint leaves
Instructions:
1. Preheat oven to 325°F (163°C).
2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
3. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
4. In a large mixing bowl, beat cream cheese until smooth and creamy.
5. Add sugar, sour cream, vanilla, flour, and heavy cream. Mix until fully combined.
6. Add eggs one at a time, mixing on low speed after each addition. Do not overmix.
7. Pour filling over the cooled crust and smooth the top.
8. Wrap the outside of the springform pan with foil and place it into a larger baking pan. Add hot water halfway up the sides for a water bath.
9. Bake for 65–70 minutes until the center is slightly jiggly.
10. Turn off the oven, crack the door open slightly, and let cheesecake cool inside for 1 hour.
11. Refrigerate for at least 5–6 hours or overnight before slicing.
12. Top with fresh strawberries and whipped cream before serving.

For the creamiest cheesecake, make sure all ingredients are at room temperature before mixing!
