Green Chocolate-Chip Cookie Dough Brownie Bites

📋 Ingredients
Green Brownie Base
● ½ cup unsalted butter, melted
● 1 cup granulated sugar
● 2 large eggs
● 1 teaspoon vanilla extract
● ½ teaspoon peppermint extract (optional for flavor)
● ½ cup all-purpose flour
● ¼ teaspoon salt
● Green gel food coloring
● 1–2 teaspoons matcha powder or pistachio pudding mix (for natural green tone)
Cookie Dough Dome (Egg-Free)
● ½ cup unsalted butter, softened
● ½ cup brown sugar
● ¼ cup granulated sugar
● 2 tablespoons milk
● 1 teaspoon vanilla extract
● 1 cup all-purpose flour, heat-treated
● ½ cup mini chocolate chips
Glossy Green Glaze
● 1 cup white chocolate chips or candy melts
● ¼ cup heavy cream
● Green gel food coloring
● 1 teaspoon pistachio pudding powder or matcha powder (optional)
● Mini chocolate chips (for topping)
📝 Instructions
1: Make the green brownie base – Preheat oven to 350°F (175°C). Whisk melted butter and sugar together, then add eggs and vanilla. Mix in flour, salt, green coloring, and matcha or pistachio powder until smooth.
2: Bake – Pour batter into a lined square pan and bake for 18–20 minutes. Let cool completely, then cut into thick round discs using a cutter.
3: Prepare cookie dough – Cream butter and both sugars until fluffy. Add milk and vanilla, then fold in heat-treated flour and mini chocolate chips until soft and moldable.
4: Shape domes – Scoop cookie dough into half-sphere molds or shape by hand into smooth domes. Freeze for 20 minutes until firm.
5: Assemble – Place each chilled cookie dough dome onto a green brownie base and press gently.
6: Make the glossy glaze – Heat heavy cream until warm, pour over white chocolate chips, and stir until silky smooth. Add green coloring and optional pistachio or matcha powder until you get the soft pastel green color from the picture.
7: Glaze – Spoon the glaze over each dome, letting it drip naturally down the sides.
8: Finish – Top with mini chocolate chips while the glaze is still soft. Chill for 15–20 minutes until set.
