Homemade Fresh Strawberry Cake
This Homemade Fresh Strawberry Cake is bursting with real strawberry flavor in every bite! 
Perfect for birthdays, spring gatherings, summer parties, or whenever you’re craving a slice of strawberry heaven. 

For the Strawberry Cake:
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
2 tsp vanilla extract
1/2 cup sour cream
3/4 cup fresh strawberry puree
1/2 cup whole milk
For the Strawberry Puree:
2 cups fresh strawberries, hulled and chopped
For the Strawberry Cream Cheese Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup strawberry puree (reduced and cooled)
1 tsp vanilla extract
Optional Garnish:
Fresh strawberries
Strawberry slices
White chocolate shavings
Step 1:
Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
Step 2:
Blend fresh strawberries until smooth. Simmer the puree in a saucepan for 10–15 minutes until reduced and concentrated. Let cool.
Step 3:
In a bowl, whisk together flour, baking powder, and salt.
Step 4:
In a large bowl, beat butter and sugar until light and fluffy.
Step 5:
Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
Step 6:
Alternate adding the dry ingredients and milk, mixing until just combined.
Step 7:
Fold in the cooled strawberry puree.
Step 8:
Divide batter evenly between prepared pans.
Step 9:
Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
Step 10:
Cool completely before frosting.
Step 11:
For the frosting, beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix in the reduced strawberry puree and vanilla.
Step 12:
Frost the cake, garnish with fresh strawberries, and chill for 20 minutes before serving.
