Minute Peach Bellini Cupcakes

½ cup non-alcoholic sparkling white grape juice or sparkling apple juice
½ cup peach puree

Preheat oven to 350°F and line a muffin pan with cupcake liners.
In a bowl, whisk together the flour, baking powder, and salt.
In a separate large bowl, beat the softened butter and sugar until light, creamy, and fluffy.
Add the eggs one at a time, mixing well after each one. Stir in the vanilla extract.
Gradually add the dry ingredients, alternating with the sparkling juice and peach puree. Mix gently until the batter is smooth and combined.
Fill each cupcake liner about two-thirds full.
Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
Let the cupcakes cool in the pan for a few minutes, then transfer them to a cooling rack and cool completely.
For the peach buttercream, beat the butter until creamy. Slowly add the powdered sugar, then mix in the peach puree and vanilla until fluffy, smooth, and beautiful.
Pipe or spread the frosting over the cooled cupcakes.
Finish with fresh peach slices and a sprinkle of sparkling sugar on top.
