Pina Colada Pound Cake

Ingredients:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup crushed pineapple, drained
1/2 cup coconut milk
1/2 cup shredded coconut
1/4 cup pineapple juice
1 teaspoon coconut extract (for that classic pina colada flavor)
1 teaspoon vanilla extract
For the Glaze:
1 cup powdered sugar
2–3 tablespoons pineapple juice
1/2 teaspoon coconut extract
Directions:
Preheat the Oven:
Preheat your oven to 175°C (350°F). Grease and flour a loaf or bundt pan.
Cream Butter and Sugar:
In a large mixing bowl, beat the butter and sugar until light and fluffy.
Add Eggs:
Add eggs one at a time, mixing well after each addition.
Mix Dry Ingredients:
In a separate bowl, whisk together flour, baking powder, and salt.
Prepare Wet Mixture:
In another bowl, combine crushed pineapple, coconut milk, pineapple juice, coconut extract, and vanilla extract.
Combine Batter:
Gradually add dry ingredients to the butter mixture, alternating with the wet mixture. Mix until just combined.
Fold in Coconut:
Gently fold in shredded coconut.
Bake:
Pour the batter into the prepared pan and bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
Make the Glaze:
Mix powdered sugar, pineapple juice, and coconut extract until smooth.
Cool & Glaze:
Allow the cake to cool completely, then drizzle the glaze over the top before serving.
