A cheesy mashup of your two favorites—enchiladas + pizza in one saucy, beefy bite! 😋
Ingredients:
* 1 lb ground beef
* 1/2 cup diced onion
* 1/2 cup diced bell pepper (optional)
* 1 cup pizza sauce
* 6 flour tortillas
* 1 1/2 cups shredded mozzarella cheese
* 1/4 cup sliced black olives
* 18 slices pepperoni
* 1 tsp Italian seasoning
* 1/2 tsp garlic powder
* Salt & pepper to taste
* Fresh parsley or basil for garnish
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a skillet, cook ground beef with diced onion (and bell pepper if using) until fully browned. Drain excess grease.
3. Stir in garlic powder, Italian seasoning, salt, pepper, and 1/2 cup pizza sauce. Simmer for 2-3 minutes.
4. Spread a spoonful of sauce on the bottom of a baking dish.
5. Fill each tortilla with the beef mixture, a sprinkle of mozzarella, and a few olives. Roll up and place seam-side down in the baking dish.
6. Pour remaining pizza sauce over the top, then cover with mozzarella and pepperoni slices.
7. Bake for 20–25 minutes or until bubbly and golden.
8. Garnish with parsley or basil before serving.
Pro Tip:
Swap out ground beef for Italian sausage or add diced jalapeños to the filling for a spicy twist!
