Protein Cottage Cheese Cinnamon Roll Bake 🍂
A soft, lightly sweet cinnamon bake packed with protein and swirled with cozy cinnamon flavor.
Ingredients
For the Bake:
1 cup cottage cheese
3 large eggs
1/4 cup maple syrup or sugar-free maple syrup
1 teaspoon vanilla extract
1 cup oat flour
1 scoop (about 30g) vanilla protein powder
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
For the Cinnamon Swirl:
2 tablespoons melted butter
2 tablespoons brown sugar or brown sugar substitute
1 teaspoon ground cinnamon
For the Glaze:
1/2 cup plain Greek yogurt
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
Blend the cottage cheese, eggs, maple syrup, and vanilla until smooth.
In a large bowl, whisk together the oat flour, protein powder, baking powder, cinnamon, and salt.
Pour the wet ingredients into the dry ingredients and stir until combined.
Spread the batter evenly into the prepared baking dish.
In a small bowl, mix the melted butter, brown sugar, and cinnamon. Drizzle over the batter and use a knife to gently swirl it throughout.
Bake for 28–32 minutes, or until the center is set and a toothpick comes out clean.
Let cool for 10 minutes.
Stir together the Greek yogurt, maple syrup, and vanilla to make the glaze.
Drizzle the glaze over the warm bake, slice, and serve.
