Ingredients:
1 sponge cake sheet (or vanilla cake layer)
1 cup cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
1 1/2 cups fresh strawberries, sliced
1/2 cup strawberry sauce or syrup
1 cup crushed vanilla cookies or shortbread crumbs
Extra whipped cream and whole strawberries for topping
Instructions:
1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
2. In another bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
3. Lay out the sponge cake sheet and spread an even layer of the cheesecake filling.
4. Add sliced strawberries evenly across the surface.
5. Carefully roll the cake tightly into a log, then wrap and chill for 1–2 hours.
6. Once chilled, slice into rolls.
7. Lightly coat the outside of each roll with strawberry sauce, then roll in crushed cookie crumbs.
8. Top with whipped cream and a whole strawberry.
9. Drizzle extra strawberry sauce before serving.
