Chocolate Covered Cherry Rice Krispies Treats
Ingredients:
– 6 cups Rice Krispies cereal
– ¼ cup unsalted butter
– 10 ounces mini marshmallows
– 1 teaspoon vanilla extract
– 1 cup maraschino cherries, well-drained and chopped
– 1½ cups semi-sweet chocolate chips
– 1 tablespoon coconut oil (optional)
Directions:
1. Grease a 9×13 inch baking dish and set aside.
2. In a large saucepan, melt the butter over low heat.
3. Add the mini marshmallows to the melted butter and stir continuously until completely melted and smooth.
4. Remove from heat and stir in the vanilla extract and chopped maraschino cherries.
5. Add the Rice Krispies cereal to the marshmallow mixture and gently fold until all the cereal is coated.
6. Press the mixture evenly into the prepared baking dish using a buttered spatula or wax paper to avoid sticking.
7. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each, until smooth.
8. Pour the melted chocolate over the Rice Krispies layer and spread evenly.
9. Allow the treats to set at room temperature or refrigerate for 20-30 minutes until the chocolate hardens.
10. Cut into squares and serve.
