Gooey Coffee Caramel Cake

A rich, moist coffee-infused cake layered with creamy caramel frosting and topped with a luscious caramel drizzle and roasted coffee beans—perfect for coffee lovers! 😍🔥
Ingredients:
For the cake:
* 2 cups all-purpose flour
* 1 ½ tsp baking powder
* 1 tsp baking soda
* ½ tsp salt
* ¾ cup unsalted butter, softened
* 1 cup brown sugar
* ½ cup granulated sugar
* 2 large eggs
* 2 tsp vanilla extract
* 1 tbsp instant coffee or espresso powder
* 1 cup buttermilk
* ½ cup hot water
For the caramel coffee frosting:
* 1 cup unsalted butter, softened
* ½ cup caramel sauce
* 2 tbsp strong brewed coffee (cooled)
* 3 cups powdered sugar
For topping:
* ¼ cup caramel sauce (for drizzling)
* Whole roasted coffee beans (for garnish)
Instructions:
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a separate bowl, cream butter with both sugars until fluffy. Beat in eggs, vanilla, and instant coffee.
4. Add dry ingredients alternately with buttermilk, then mix in hot water until smooth.
5. Divide batter between pans and bake for 30–35 minutes, or until a toothpick comes out clean. Cool completely.
6. For frosting, beat butter until fluffy, then add caramel sauce and coffee. Gradually mix in powdered sugar until creamy.
7. Assemble cake with layers of frosting in between, and a thick swirl on top.
8. Drizzle with caramel sauce and garnish with whole coffee beans.
